Ingredients
Cheese Tortellini:
- 1 (20-ounce) package cheese tortellini
Veggies:
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely sliced
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella pearls
- 1/3 cup chopped pepperoncini
Dressing:
- 3/4 cup zesty Italian dressing
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
Garnish:
- Chopped fresh parsley or basil, for garnish (optional)
Instructions
- Cook the Tortellini: Cook the tortellini according to package instructions until al dente. Drain and rinse under cold water.
- Prepare the Salad: In a large bowl, combine the tortellini, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, mozzarella pearls, and pepperoncini.
- Make the Dressing: In a small bowl, whisk together the zesty Italian dressing, olive oil, Italian seasoning, salt, and pepper.
- Combine and Chill: Pour the dressing over the salad and toss gently to coat. Chill for at least 30 minutes.
- Serve: Garnish with fresh parsley or basil before serving.
