Description

These Zesty Shoestring Fries are crispy, flavorful, and packed with a perfect blend of spices, making them an irresistible snack or side dish. Thinly sliced russet potatoes are seasoned with paprika, garlic, chili, and a hint of cayenne for a spicy kick, then oven-baked to golden perfection. Optionally finished with grated Parmesan cheese for an extra burst of zest, these fries are ideal for serving alongside burgers, sandwiches, or enjoyed solo with your favorite dipping sauces.

Ingredients

Potatoes

  • 2 lbs russet potatoes, peeled and cut into thin matchsticks (shoestring style)

Seasoning & Oil

  • 2 tbsp olive oil (or vegetable oil)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper (adjust for spice preference)
  • 1/2 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Optional Topping

  • 1 tbsp grated Parmesan cheese (for extra zest)

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking and allow for easy cleanup.
  2. Prepare Potatoes: Peel the russet potatoes and carefully slice them into thin, matchstick-sized fries about 1/8-inch thick. For uniformity, use a mandoline slicer or a sharp knife.
  3. Soak & Dry: Place the cut potatoes in a bowl of cold water and soak for 10 minutes to remove excess starch, which helps in achieving crispiness. Drain and pat each fry completely dry using a clean kitchen towel or paper towels.
  4. Toss with Seasonings: In a large mixing bowl, toss the dried fries with olive oil, paprika, garlic powder, onion powder, cayenne pepper, chili powder, salt, and black pepper. Make sure the fries are evenly coated with the seasoning mixture.
  5. Arrange & Bake: Spread the seasoned fries out in a single layer on the prepared baking sheet, ensuring they are not overcrowded to allow proper air circulation and crisp cooking. Bake for 20-25 minutes, flipping the fries halfway through baking to ensure even browning and crispiness.
  6. Add Parmesan: Immediately after baking, sprinkle the fries with grated Parmesan cheese if using, so the cheese slightly melts and adds an extra burst of flavor.
  7. Serve: Serve the zesty shoestring fries hot. Pair them with your favorite dipping sauces like ketchup, ranch dressing, or spicy mayo for a delightful snack or side dish experience.

Notes

  • Soaking the potatoes in cold water before baking removes excess starch and helps make fries crispier.
  • Ensure the fries are completely dry before tossing with oil and spices to avoid sogginess.
  • Do not overcrowd the baking sheet; the fries need space to bake evenly and become crispy.
  • Adjust cayenne pepper amount according to your preferred spice level.
  • Using parchment paper or a silicone mat prevents sticking and makes cleanup easier.
  • Parmesan cheese topping is optional but adds a nice zesty flavor twist.
