Ingredients
Yellow Squash Mixture
- 2 cups yellow squash, grated
- 1/2 tsp salt
- 1/3 cup breadcrumbs (panko or regular)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 tbsp chopped parsley (optional)
- Salt and pepper to taste

- Drain the Squash: Place the grated squash in a clean towel or cheesecloth, sprinkle with 1/2 tsp salt, and let sit for 10 minutes to draw out the moisture. After resting, squeeze out as much liquid as possible to keep the tots firm.
- Mix Ingredients: In a bowl, combine the drained squash, breadcrumbs, grated Parmesan cheese, egg, garlic powder, onion powder, parsley (if using), and a pinch of salt and pepper. Mix thoroughly until well combined.
- Form the Tots: Using your hands or a small scoop, shape the mixture into small tot-shaped logs. Place them evenly spaced on the prepared baking sheet.
- Apply Oil: Lightly spray the tops of the tots with cooking spray or brush them with a little oil. This step helps achieve a crispy exterior.
- Bake: Bake in the preheated oven for 18 to 22 minutes, flipping the tots halfway through baking. Bake until they are golden brown and crisp on the outside.
- Serve: Remove from oven and serve warm with your favorite dipping sauces such as ketchup or ranch dressing.
