Description

Ingredients

Yellow Squash Mixture

  • 2 cups yellow squash, grated
  • 1/2 tsp salt
  • 1/3 cup breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tbsp chopped parsley (optional)

Instructions

  2. Drain the Squash: Place the grated squash in a clean towel or cheesecloth, sprinkle with 1/2 tsp salt, and let sit for 10 minutes to draw out the moisture. After resting, squeeze out as much liquid as possible to keep the tots firm.
  3. Mix Ingredients: In a bowl, combine the drained squash, breadcrumbs, grated Parmesan cheese, egg, garlic powder, onion powder, parsley (if using), and a pinch of salt and pepper. Mix thoroughly until well combined.
  4. Form the Tots: Using your hands or a small scoop, shape the mixture into small tot-shaped logs. Place them evenly spaced on the prepared baking sheet.
  5. Apply Oil: Lightly spray the tops of the tots with cooking spray or brush them with a little oil. This step helps achieve a crispy exterior.
  6. Bake: Bake in the preheated oven for 18 to 22 minutes, flipping the tots halfway through baking. Bake until they are golden brown and crisp on the outside.
