Ingredients
Salad:
- 6 cups mixed greens (such as arugula, spinach, and baby kale)
- 1 apple, thinly sliced
- 1 pear, thinly sliced
- 1/2 cup pomegranate seeds
- 1/3 cup dried cranberries
- 1/2 cup candied pecans or walnuts
- 1/3 cup crumbled goat cheese or feta
Vinaigrette:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Vinaigrette: In a small bowl or jar, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper until fully emulsified. Taste and adjust seasoning if needed.
