Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Prepare the oranges: Wash the oranges thoroughly, chop them into chunks, removing any seeds. Leave the peel on. Place the chopped oranges in a food processor or blender and pulse until smooth.
- Mix wet ingredients: In a large bowl, whisk together the eggs and sugar until light and frothy. Add the oil and blended oranges, mix well.
- Combine dry ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually stir into wet mixture until just combined.
- Bake the cake: Pour the batter into the prepared pan, smooth the top. Bake for 40–45 minutes until a toothpick inserted into the center comes out clean.
- Cool and serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving if desired.
