Description

Delightfully creamy and flavorful white chocolate strawberry truffles made with a luscious ganache infused with freeze-dried strawberry powder, coated in smooth white chocolate, and sprinkled with crushed freeze-dried strawberries for an elegant and irresistible treat perfect for any special occasion or gift.

Ingredients

For the Truffles:

  • 1 cup white chocolate, chopped
  • 1/2 cup heavy cream
  • 1/4 cup freeze-dried strawberries, blended into powder

For the Coating:

  • 1 cup white chocolate, chopped
  • 1 tablespoon freeze-dried strawberries, crushed

Instructions

  1. Heat the cream: Warm the heavy cream in a saucepan over medium heat until it begins to simmer gently, but do not let it boil.
  2. Create ganache: Pour the hot cream over the chopped white chocolate and let it sit untouched for 2 minutes to soften the chocolate, then stir until the mixture is smooth and glossy.
  3. Mix in strawberry powder: Add the freeze-dried strawberry powder to the ganache and stir well to evenly combine the strawberry flavor throughout the creamy mixture.
  4. Chill the ganache: Transfer the mixture to the refrigerator for about 2 to 3 hours, or until it firms up and becomes scoopable.
  5. Shape the truffles: Using a spoon or melon baller, scoop out 1-inch portions of the chilled ganache and roll each into a smooth ball with your hands.
  6. Chill again: Place the truffle balls on a tray and refrigerate for at least another 30 minutes to help them firm up further before coating.
  7. Melt coating chocolate: In a microwave-safe bowl, melt the white chocolate intended for coating by heating in 20 to 30 second bursts, stirring between intervals until fully smooth and melted.
  8. Coat the truffles: Dip each chilled truffle ball into the melted white chocolate, ensuring they are completely covered in a smooth layer of coating.
  9. Add strawberry topping: Immediately sprinkle the coated truffles with crushed freeze-dried strawberries for added texture and strawberry flavor while the coating is still wet.
  10. Set the truffles: Place the coated truffles back in the refrigerator for about 30 minutes to allow the white chocolate coating to cool and harden fully.

Notes

  • Use high-quality white chocolate for the best flavor and smooth texture.
  • Freeze-dried strawberries provide intense strawberry flavor without adding moisture.
  • Keep the truffles refrigerated until serving to maintain their shape and firmness.
  • For easier rolling, lightly oil your hands or chill the ganache thoroughly before shaping.
  • These truffles make excellent gifts when packaged in decorative boxes or tins.
