Ingredients
For the Crust:
- 12 vanilla wafer cookies
For the Cheesecake:
- 1 (8-ounce) package cream cheese, softened
- 1/3 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 cup sour cream
- 1/2 cup white chocolate chips, melted and slightly cooled
- 1/3 cup blueberry preserves or jam
- 1/2 cup fresh blueberries (optional for garnish)
Instructions
- Prepare the Crust: Preheat oven to 325°F (160°C) and line a 12-cup muffin tin with liners. Place a vanilla wafer in each liner.
- Make the Cheesecake Batter: Beat cream cheese and sugar until smooth. Add egg, vanilla, and sour cream. Fold in melted white chocolate.
- Assemble and Bake: Spoon batter into muffin cups. Add blueberry preserves and swirl. Bake for 18–22 minutes. Cool and refrigerate.
- Serve: Top with fresh blueberries before serving.
