Main Ingredients:
- 1 tablespoon olive oil
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1 can (4 oz) diced green chiles
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground coriander
- 3 cups cooked shredded chicken
- 2 cans (15 oz each) white beans (drained and rinsed)
- 3 cups chicken broth
Additional Ingredients:
- 1/2 cup sour cream
- 1/2 cup half-and-half or milk
- Salt and pepper to taste
- Juice of 1 lime
- Chopped fresh cilantro
- Shredded cheese
- Sliced jalapeños for garnish (optional)
Instructions
- Sauté Aromatics: Heat olive oil in a large pot, sauté onion until soft, then add garlic.
- Add Flavor: Stir in green chiles, cumin, oregano, chili powder, and coriander.
- Combine Ingredients: Add chicken, white beans, and broth. Simmer for 15–20 minutes.
- Finish and Serve: Stir in sour cream, half-and-half. Season with salt, pepper, and lime juice. Serve hot with toppings.
Notes
- Rotisserie chicken works well in this recipe.
- To increase spiciness, add more chiles or cayenne.
- For a lighter option, use Greek yogurt instead of sour cream.
