Description

Ingredients

Main Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 can (4 oz) diced green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground coriander
  • 3 cups cooked shredded chicken
  • 2 cans (15 oz each) white beans (drained and rinsed)
  • 3 cups chicken broth

Additional Ingredients:

  • 1/2 cup sour cream
  • 1/2 cup half-and-half or milk
  • Salt and pepper to taste
  • Juice of 1 lime
  • Chopped fresh cilantro
  • Shredded cheese
  • Sliced jalapeños for garnish (optional)

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot, sauté onion until soft, then add garlic.
  2. Add Flavor: Stir in green chiles, cumin, oregano, chili powder, and coriander.
  3. Combine Ingredients: Add chicken, white beans, and broth. Simmer for 15–20 minutes.
  4. Finish and Serve: Stir in sour cream, half-and-half. Season with salt, pepper, and lime juice. Serve hot with toppings.

Notes

  • Rotisserie chicken works well in this recipe.
  • To increase spiciness, add more chiles or cayenne.
  • For a lighter option, use Greek yogurt instead of sour cream.
