Description

Ingredients

Feta Dip:

  • 8 oz block feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/4 tsp black pepper
  • 1/2 tsp lemon zest

Roasted Strawberries:

  • 1 1/2 cups fresh strawberries, hulled and halved
  • 1 tbsp balsamic vinegar
  • 1 tsp maple syrup
  • fresh thyme leaves for garnish (optional)
  • toasted baguette slices or pita chips for serving

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Roast Strawberries: Place halved strawberries on a parchment-lined baking sheet, drizzle with balsamic vinegar and maple syrup, and roast for 20–25 minutes until caramelized.
  3. Prepare Feta Dip: Blend crumbled feta, cream cheese, olive oil, honey, black pepper, and lemon zest in a food processor until smooth.
  4. Assemble: Transfer whipped feta to a serving bowl, top with roasted strawberries, and garnish with thyme if desired.
  5. Serve: Serve with toasted baguette slices or pita chips.

Notes

  • You can make the whipped feta ahead of time and refrigerate it for up to 3 days. Let it come to room temperature before serving.
  • Swap maple syrup with honey if preferred, and use vegan feta and cream cheese to make it plant-based.
