Description
Whimsical Forgotten Cookies are a delightful twist on traditional meringue cookies. These airy treats are made with egg whites, sugar, and a hint of vanilla, then studded with mini chocolate chips and nuts for added crunch. The magic happens as they are left to ‘bake’ overnight in a turned-off oven, resulting in crisp, light cookies that practically melt in your mouth.
Ingredients
Egg White Mixture:
- 2 large egg whites
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- pinch of salt
Add-Ins:
- 1/2 cup mini chocolate chips
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat and Prepare: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Whip Egg Whites: In a clean mixing bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff peaks form. Mix in vanilla and salt.
- Add Mix-Ins: Gently fold in chocolate chips and nuts if using.
- Bake: Drop spoonfuls onto the prepared sheet. Place in oven, then turn it off. Leave overnight without opening the door.
- Enjoy: In the morning, the cookies will be crisp and ready to enjoy!
Notes
- Be cautious not to mix any yolk into the whites for optimal whipping.
- Customize with crushed peppermint, sprinkles, or dried fruit for a festive touch.
