Description

Ingredients

Ground Beef Mixture:

  • 2 pounds ground beef

Beans and Vegetables:

  • 1 (29-ounce) can kidney beans, drained
  • 1 (29-ounce) can pinto beans, drained
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 cup water
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 3 stalks celery, chopped
  • 1 (4-ounce) can diced green chilies
  • 3 cloves garlic, minced

Seasonings:

  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon sugar
  • 1/4 teaspoon cayenne pepper


Instructions

  1. Brown the Beef: In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess grease.
  2. Sauté Vegetables: Add onion, bell pepper, celery, and garlic. Sauté until softened.
  3. Add Ingredients: Stir in tomatoes, tomato sauce, beans, chilies, and water. Add seasonings.
  4. Cook: Bring to a boil, then simmer for 1-1.5 hours until thickened.
  5. Adjust Seasoning: Taste and adjust as needed. Serve hot.

Notes

  • For extra heat, add more cayenne or jalapeño.
  • Leftovers taste even better the next day and freeze well.
