Ingredients

Watermelon:

4 cups seedless watermelon cubes

Granulated Sugar:

1 cup

Lemon Juice:

juice of 1 lemon

Lemon Zest:

1 teaspoon


Instructions

  1. Prepare Watermelon Puree: Place watermelon cubes in a blender and puree until smooth. Strain through a fine mesh sieve into a saucepan to remove pulp.
  2. Mix Ingredients: Add sugar, lemon juice, and lemon zest to the saucepan with the watermelon juice. Bring to a gentle boil over medium heat, stirring until the sugar dissolves.
  3. Simmer: Reduce heat to low and simmer for 35 to 45 minutes, stirring occasionally, until the mixture thickens into a syrupy, honey-like consistency.
  4. Cool and Store: Remove from heat and let cool completely. Transfer to a clean jar and refrigerate for up to 2 weeks.
