- 4 cups seedless watermelon, cubed
- 1 cup cucumber, sliced and halved
- 3/4 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh mint leaves, chopped
Dressing
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- Salt and black pepper to taste
Instructions
- Combine the main ingredients: In a large bowl, add the watermelon cubes, cucumber slices, thinly sliced red onion, and chopped fresh mint leaves. This creates the fresh base of the salad.
- Add dressing and toss: Drizzle the olive oil and fresh lime juice over the bowl ingredients. Gently toss everything together to coat the fruits and vegetables evenly with the dressing.
- Fold in feta cheese: Carefully add the crumbled feta cheese to the salad and gently fold it in to avoid breaking the feta into very small pieces, preserving its texture and visual appeal.
- Season and serve: Season the salad with salt and freshly ground black pepper to taste. Serve immediately for the best texture and freshness, or chill in the refrigerator for 15–20 minutes to enhance flavors before serving.
