Ingredients
For the Cupcakes:
- 1 box white cake mix
- 1 cup watermelon puree (seedless)
- 1/3 cup vegetable oil
- 3 large eggs
- Pink or red food coloring (optional)
- 1/2 cup mini chocolate chips (to resemble seeds)
For the Frosting:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 2 tablespoons watermelon puree or watermelon-flavored drink mix
- 1–2 tablespoons heavy cream (as needed)
- Green food coloring (optional)
Instructions
- Preheat oven and prepare muffin tin: Preheat oven to 350°F (175°C) and line a muffin tin with 18 cupcake liners.
- Mix cupcake batter: In a large bowl, combine cake mix, watermelon puree, oil, and eggs. Add food coloring if desired. Fold in mini chocolate chips.
- Bake cupcakes: Fill cupcake liners and bake for 18–22 minutes. Cool completely.
- Make the frosting: Beat butter, add powdered sugar and watermelon puree. Adjust consistency with heavy cream. Mix in green food coloring.
- Frost the cupcakes: Pipe or spread frosting on cooled cupcakes. Decorate as desired.
Notes
- For a fun twist, use a green cupcake liner and swirl pink and green frosting on top.
- Store cupcakes in the fridge and bring to room temperature before serving.
