This Walking Taco Casserole is a Tex-Mex inspired dish that layers seasoned ground beef, black beans, corn, and cheese over a bed of crunchy corn chips, baked to melty perfection. Top with your favorite taco toppings for a customizable and delicious meal.
Ingredients
Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- ⅓ cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 1 can (10 oz) diced tomatoes with green chiles, drained
Additional Ingredients:
- 2 cups shredded cheddar cheese
- 4 cups crushed corn chips (such as Fritos)
- Sour cream, chopped lettuce, diced tomatoes, sliced green onions, and jalapeños for topping (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook Ground Beef: In a large skillet over medium heat, cook the ground beef and diced onion until browned. Drain excess grease.
- Season Beef: Stir in taco seasoning and water. Simmer for 2–3 minutes.
- Add Beans and Veggies: Add black beans, corn, and diced tomatoes to the skillet. Heat through.
- Layer Casserole: Spread half of the corn chips in a baking dish. Top with the meat mixture and cheese.
- Bake: Bake for 15–20 minutes until cheese is melted. Add remaining corn chips on top.
- Serve: Serve warm with optional toppings.
Notes
- You can use ground turkey or chicken instead of beef.
- For extra heat, use hot taco seasoning or add hot sauce.
