Ingredients
Meat Mixture
- 1 pound ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (10 ounces) Rotel diced tomatoes with green chilies, drained
Casserole Assembly
- 3 cups corn chips (such as Fritos)
- 2 cups shredded cheddar cheese
Toppings
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s hot and ready for baking the casserole.
- Cook Beef: In a large skillet over medium heat, cook the ground beef thoroughly until browned and no longer pink. Drain off any excess fat to keep the dish from being greasy.
- Add Seasoning: Stir in the taco seasoning mix and water, then simmer the mixture for 2 to 3 minutes until it thickens and the flavors meld together.
- Add Beans and Tomatoes: Mix in the drained black beans and Rotel diced tomatoes with green chilies, stirring well to combine all ingredients evenly.
- Layer Chips: Spread half of the corn chips evenly in the bottom of a 9×13-inch baking dish to create a crunchy base layer for the casserole.
- Layer Beef Mixture: Pour the prepared beef and bean mixture over the corn chips and spread it evenly across the dish.
- Add Cheese: Sprinkle the shredded cheddar cheese evenly over the beef mixture, creating a cheesy topping that will melt beautifully in the oven.
- Bake: Place the casserole in the preheated oven and bake for 15 to 20 minutes, or until the cheese is fully melted and bubbly.
- Rest: Remove the casserole from the oven and let it sit for 5 minutes to set and cool slightly for easier serving.
- Add Toppings: Just before serving, top the casserole with the remaining corn chips, sour cream, chopped green onions, diced tomatoes, and chopped cilantro if using, to add fresh textures and flavors.
Notes
- You can substitute ground beef with ground turkey or chicken for a leaner alternative.
- For a spicier kick, use hot Rotel or add chopped jalapeños to the beef mixture.
- Serve alongside avocado slices or guacamole for added creaminess and richness.
