Ingredients

Main Bisque:

  • 2 lobster tails (about 12 ounces total)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/2 cup dry white wine
  • 4 cups seafood stock (or fish stock)
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons brandy or cognac
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Cook Lobster: Boil lobster tails until shells turn red, remove meat, and chop.
  2. Saute Aromatics: Cook onion, carrots, celery, and garlic. Add tomato paste.
  3. Simmer: Add lobster shells, wine, stock, herbs, and spices. Cook for 30 minutes.
  4. Puree: Blend mixture until smooth.
  5. Thicken: Whisk flour into cream, then add to bisque. Simmer until thickened.
  6. Finish: Stir in brandy, season, and add lobster. Simmer briefly.
  7. Serve: Ladle into bowls, garnish with parsley.
