- 2 lobster tails (about 12 ounces total)

- 2 tablespoons tomato paste
- 1/2 cup dry white wine
- 4 cups seafood stock (or fish stock)

- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- 2 tablespoons brandy or cognac

- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Cook Lobster: Boil lobster tails until shells turn red, remove meat, and chop.
