Ingredients
Vegetarian Chili:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (28-ounce) can diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1/2 cup vegetable broth or water (more as needed)

Instructions
- Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper. Cook for 4–5 minutes until softened. Stir in zucchini and cook another 3 minutes.
- Add Beans and Spices: Stir in black beans, kidney beans, corn, diced tomatoes, tomato paste, chili powder, cumin, smoked paprika, salt, and pepper. Add broth to thin slightly.
- Simmer the Chili: Bring to a simmer, then reduce heat and cook uncovered for 25–30 minutes, stirring occasionally, until thick and flavorful. Adjust seasoning as needed.
- Serve: Ladle into bowls and top with your favorite garnishes like avocado, cheese, or cilantro.
Notes
- Add a pinch of cayenne or chopped jalapeño for extra heat.
