Description

These Vegan Peanut Butter Sugar Cookies are a delightful treat for those with a sweet tooth. Made with simple ingredients, they are easy to whip up and perfect for any occasion.


Ingredients

For the cookies:

  • 1 cup natural creamy peanut butter
  • ¾ cup granulated sugar
  • ¼ cup brown sugar (packed)
  • ¼ cup almond milk
  • 2 teaspoons vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • optional: extra sugar for rolling


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, combine peanut butter, granulated sugar, and brown sugar until smooth. Mix in almond milk and vanilla extract.
  3. Combine dry ingredients: In another bowl, whisk together flour, baking soda, baking powder, and salt.
  4. Form dough: Gradually add dry ingredients to wet mixture, stirring until a dough forms.
  5. Shape cookies: Scoop tablespoon-sized portions, roll into balls, and coat with sugar if desired. Flatten each ball with a fork in a criss-cross pattern.
  6. Bake: Bake for 10–12 minutes until lightly golden. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a gluten-free version, use a 1:1 gluten-free flour blend.
