Description

These Vegan Almond Croissant Cookie Bars are a delightful treat that combines the flavors of almond croissants in a convenient cookie bar form. A crunchy almond base topped with a creamy almond filling, these bars are perfect for a sweet vegan indulgence.


Ingredients

For the Base:

  • 1 1/2 cups almond flour
  • 1 cup all-purpose flour
  • 1/2 cup coconut oil (solid but scoopable)
  • 1/3 cup maple syrup
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

For the Filling:

  • 1/2 cup sliced almonds
  • 1/4 cup almond butter
  • 2 tablespoons plant-based milk
  • 2 tablespoons maple syrup (for filling)

Additional:

  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Make the Base: In a mixing bowl, combine almond flour, all-purpose flour, coconut oil, maple syrup, brown sugar, salt, vanilla, and almond extract. Press two-thirds of the dough into the prepared pan to form the base.
  3. Prepare the Filling: Mix almond butter, plant-based milk, and maple syrup until smooth. Spread over the base.
  4. Add Topping: Crumble the remaining dough on top, press gently, and sprinkle sliced almonds over it.
  5. Bake: Bake for 25–30 minutes until golden. Cool completely before cutting into bars. Dust with powdered sugar if desired.

Notes

  • For extra almond flavor, add a few drops of almond extract to the filling.
  • Store bars in the fridge for up to 5 days or freeze for longer storage.
