- 8 Rice Paper Wrappers
- 1 lb Ground Beef
- 4 slices American-Style Cheese
- ½ cup Finely Diced White Onion
- ½ cup Finely Diced Dill Pickles
- 1 cup Shredded Iceberg Lettuce
- Olive Oil for brushing (optional)
- Sesame Seeds (optional)
Special Sauce
- ½ cup Low Carb Mayonnaise
- 2 tbsp Sugar-Free Ketchup or Tomato Paste
- 2 tbsp Sugar-Free Dill Relish or finely diced dill pickles
- 1 tbsp White Vinegar
- ½ tsp Onion Powder
- ½ tsp Garlic Powder
- ½ tsp Paprika

- Prepare Your Ingredients: Combine low-carb mayonnaise, sugar-free ketchup (or tomato paste plus sweetener), sugar-free dill relish (or diced pickles with vinegar and sweetener), white vinegar, onion powder, garlic powder, and paprika in a small bowl. Stir well to create the special sauce and set aside. Finely dice the white onion and dill pickles, and shred the iceberg lettuce, setting all aside for assembly.
- Cook the Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spoon. Cook until fully browned, about 7-8 minutes, seasoning with salt and black pepper to taste. Drain excess fat and let the cooked beef cool slightly before assembling.
- Assemble the Rice Paper Rolls: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Fill a shallow dish with warm water. Dip one rice paper wrapper into the warm water for 15-20 seconds until pliable. Lay it flat on a damp work surface.
