Description

This Ultimate Grilled Cheese with Tomato Soup Dip recipe pairs perfectly golden, melty cheese sandwiches with a rich and creamy tomato soup dip. A comforting and satisfying dish ideal for lunch or a cozy snack, blending sharp cheddar, mozzarella, and provolone cheeses griddled to perfection alongside a savory, spiced tomato dip.

Ingredients

For the grilled cheese:

  • 8 slices sourdough or country white bread
  • 4 tablespoons unsalted butter, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 slices provolone cheese

For the tomato soup dip:

  • 1 tablespoon olive oil
  • 1/2 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) crushed tomatoes
  • 1/2 cup vegetable or chicken broth
  • 1/4 cup heavy cream
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Prepare the tomato soup dip: Heat olive oil in a saucepan over medium heat. Add diced onion and cook until soft, about 3–4 minutes. Stir in minced garlic and cook for 30 seconds until fragrant. Add crushed tomatoes, broth, dried basil, sugar, salt, and pepper. Bring the mixture to a simmer and cook for 10 minutes to develop flavors. Stir in heavy cream, then blend the soup using an immersion blender until smooth. Keep warm for serving.
  2. Assemble the grilled cheese sandwiches: Butter one side of each bread slice. On the unbuttered side of four slices, evenly layer the shredded sharp cheddar, mozzarella, and provolone cheese slices. Top with the remaining bread slices, buttered side facing out.
  3. Cook the sandwiches: Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for 3–4 minutes on each side until the bread is golden brown and crispy and the cheese is fully melted.
  4. Serve: Slice the grilled cheese sandwiches into halves or quarters and serve immediately with the warm tomato soup dip on the side for dipping.

Notes

  • Add a pinch of red pepper flakes to the tomato soup dip for a spicy kick.
  • Try alternative cheeses like Gruyère or fontina for different flavor variations.
  • The tomato soup dip can be made ahead of time and reheated gently before serving.
