- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 2 cups cooked shredded chicken
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10.5 oz) can cream of chicken soup
- 1 (10 oz) can diced tomatoes with green chilies (Rotel)
- 1/2 cup chicken broth
- 2 cups shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook the spaghetti: Cook the spaghetti until al dente, drain, and set aside.
- Sauté veggies: In a skillet, sauté onion and bell pepper until softened.
- Combine ingredients: In a bowl, mix spaghetti, veggies, chicken, soups, tomatoes, broth, 1 1/2 cups cheddar, garlic powder, paprika, salt, and pepper.
- Bake: Pour mixture into baking dish, top with remaining cheese, and bake for 25–30 minutes.
- Rest and serve: Let the dish rest for 5 minutes before serving.
Notes
- Use rotisserie chicken for convenience.
- Add cooked mushrooms or red pepper flakes for extra flavor.
- Can be assembled ahead and refrigerated overnight before baking.
