Description

Ingredients

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup unsalted butter (softened)
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Additional:

  • 3/4 cup chopped pecans
  • 16 soft caramel candies (unwrapped)
  • 2 tablespoons heavy cream
  • 1/3 cup semi-sweet chocolate chips


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, and salt.
  3. Cream Butter and Sugar: In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add Wet Ingredients: Beat in the egg and vanilla until fully combined.
  5. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Shape and Bake: Roll tablespoons of dough into balls, coat with pecans, place on a baking sheet, make a thumbprint in each, and bake for 10–12 minutes.
  7. Prepare Caramel: While cookies bake, melt the caramels with the heavy cream until smooth.
  8. Fill Cookies: Spoon caramel into the center of each cookie immediately upon removing from the oven.
  9. Drizzle Chocolate: Melt chocolate chips, then drizzle over the cookies.
  10. Cool and Serve: Let the cookies cool completely before serving.
