Description

This Turkey Taco Bake is a flavorful, hearty casserole combining lean ground turkey with a zesty taco seasoning, black beans, corn, and melted cheddar cheese. Perfect for a comforting weeknight dinner, it’s easy to prepare and serves six with optional toppings of sour cream and green onions for added freshness.

Ingredients

Main Ingredients

  • 1 lb lean ground turkey
  • 1 packet taco seasoning (about 1 oz)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese

Optional Toppings

  • Sour cream
  • Chopped green onions

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly spray a 9×13 inch baking dish with nonstick cooking spray to prevent sticking.
  2. Cook the Turkey: In a skillet over medium heat, brown the ground turkey for about 5-7 minutes until it is no longer pink. Drain off any excess fat to keep the dish lean.
  3. Add Seasoning and Veggies: Stir in the taco seasoning packet, black beans, and frozen corn into the cooked turkey. Let the mixture simmer for 5 minutes to allow the flavors to blend well.
  4. Assemble the Bake: Pour this turkey mixture evenly into the prepared baking dish. Then sprinkle the shredded cheddar cheese evenly on top.
  5. Bake: Place the baking dish in the oven and bake for 20-25 minutes until the cheese is bubbly and golden brown on top.
  6. Serve: Allow the dish to cool slightly before serving. Add optional sour cream and chopped green onions on top for extra flavor and freshness.

Notes

  • Use lean ground turkey to reduce fat content.
  • For a spicier kick, add diced jalapeños or a pinch of cayenne pepper with the seasoning.
  • Rinsing canned black beans removes excess sodium and improves flavor.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Try substituting cheddar with Mexican blend cheese for a richer taste.
