For the Meatloaf
- 1 1/2 pounds ground turkey
- 1/2 cup breadcrumbs

- 2 pounds sweet potatoes, peeled and cubed
- 3 tablespoons unsalted butter
- 1/4 cup milk or cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease a loaf pan to prevent sticking.
- Mix Meatloaf Ingredients: In a large bowl, combine the ground turkey, breadcrumbs, milk, egg, finely chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, black pepper, and dried thyme. Mix gently just until everything is evenly incorporated, taking care not to overmix to keep the meatloaf tender.
- Shape and Bake: Transfer the meat mixture into the prepared loaf pan, shaping it evenly. Spread a thin layer of ketchup over the top for a flavorful glaze. Place in the oven and bake for 45 to 50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (74°C).
- Cook Sweet Potatoes: While the meatloaf bakes, bring a large pot of salted water to a boil. Add the peeled and cubed sweet potatoes and cook for 15 to 20 minutes until they are fork-tender.
- Mash Sweet Potatoes: Drain the sweet potatoes well. In the same pot or a mixing bowl, mash the sweet potatoes with the unsalted butter, milk or cream, salt, and black pepper until smooth and creamy.
