Ingredients
Pasta
- 12 oz pasta (penne, spaghetti, or fusilli)
Sauce
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes (adjust to taste)
- 1/2 tsp dried oregano
- 1/4 tsp dried basil
- 1/4 tsp smoked paprika
- 1 (14 oz) can crushed tomatoes
- 1/3 cup heavy cream
Tuna
- 2 (5 oz) cans tuna in olive oil or water, drained and flaked
Seasoning and Garnish
- Salt and pepper to taste
- 2 tbsp grated Parmesan (optional)
- 2 tbsp chopped fresh parsley or basil for garnish
Instructions
- Cook Pasta: Cook the pasta in salted boiling water according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and then drain the pasta.
- Prepare Sauce Base: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it.
- Add Spices and Tomatoes: Stir in crushed red pepper flakes, dried oregano, dried basil, and smoked paprika. Pour in the canned crushed tomatoes and bring the mixture to a simmer.
- Simmer Sauce: Let the tomato sauce cook for 5 to 7 minutes, stirring occasionally, until it has thickened slightly and the flavors meld.
- Add Cream and Tuna: Stir in heavy cream, then season with salt and pepper to taste. Add the flaked tuna, gently folding it into the sauce. Let it simmer for another 2 to 3 minutes to warm through.
- Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss gently to coat in the creamy Fra Diavolo sauce. Use the reserved pasta water as needed to adjust the sauce’s consistency to your preference.
- Finish and Serve: Remove the skillet from heat. Sprinkle with grated Parmesan cheese if using, and garnish with freshly chopped parsley or basil. Serve hot for a flavorful meal.
Notes
- Use high-quality tuna packed in olive oil for the best flavor and texture.
- For a lighter dish, substitute heavy cream with milk or half-and-half.
- Enhance the dish by adding sautéed spinach or halved cherry tomatoes for extra vegetables.
