  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup mini marshmallows
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped pecans
  • 1 container (8 oz) whipped topping (like Cool Whip)
  • 1 banana (sliced)
  • 1/2 cup mandarin orange segments (drained)
  • Maraschino cherries for garnish (optional)


Instructions

  1. In a large bowl, combine the crushed pineapple with its juice and the instant vanilla pudding mix. Stir until fully combined and thickened slightly.
  2. Add in the mini marshmallows, shredded coconut, and chopped pecans, mixing gently.
  3. Fold in the whipped topping until smooth.
  4. Gently stir in the banana slices and mandarin orange segments.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
  6. Garnish with maraschino cherries just before serving, if desired.
