Ingredients
Crust
- 1 cup all purpose flour
- 1/4 cup + 2 tbsp softened butter
- 1 tsp vanilla extract
- 1/2 cup granulated sugar
- 1/2 tsp salt
Berry Filling
- 1 1/4 cups blackberries
- 1 1/2 cups blueberries
- 1 1/4 cups raspberries
- 1/4 cup cornstarch
- 1/2 cup sugar
- 1 tsp lemon zest
Topping
- 1/4 cup softened butter
- 1/2 cup + 2 tbsp all purpose flour
- 1/4 cup + 2 tbsp granulated sugar
- 1/4 tsp salt
Instructions
- Prepare the crust: In a mixing bowl, combine 1 cup all purpose flour, 1/4 cup plus 2 tablespoons softened butter, 1 teaspoon vanilla extract, 1/2 cup granulated sugar, and 1/2 teaspoon salt. Mix until the dough comes together into a crumbly but cohesive texture. Press this mixture evenly into the bottom of a greased 9×13 inch baking dish to form the crust layer.
- Make the berry filling: In a separate bowl, gently toss together the blackberries, blueberries, and raspberries with 1/4 cup cornstarch, 1/2 cup sugar, and 1 teaspoon lemon zest. This mixture will help thicken the berry juices as they bake and add brightness from the lemon zest.
- Assemble the bars: Spread the berry filling evenly over the prepared crust, making sure to distribute the berries and juice evenly across the base to ensure every bite has fruit.
- Prepare the topping: In another bowl, combine 1/4 cup softened butter, 1/2 cup plus 2 tablespoons flour, 1/4 cup plus 2 tablespoons sugar, and 1/4 teaspoon salt. Mix with your fingers or a pastry cutter until crumbly. Sprinkle this crumb mixture evenly over the berry layer.
- Bake: Preheat the oven to 350°F (175°C). Place the assembled baking dish in the oven and bake for 45 to 50 minutes or until the topping is golden brown and the berry filling is bubbling.
- Cool and serve: Remove from the oven and allow to cool completely at room temperature. Once cooled, cut into 16 bars and serve. These bars can be enjoyed on their own or topped with vanilla ice cream.
