Description

This Tortellini Caprese Salad is a refreshing and flavorful dish perfect for any occasion. Filled with cheese tortellini, cherry tomatoes, fresh mozzarella, and basil, all tossed in a tangy balsamic dressing, it’s a colorful and satisfying salad.


Ingredients

Cheese Tortellini:

  • 1 (20-ounce) package refrigerated cheese tortellini

Caprese Salad:

  • 1 pint cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine)
  • 1/4 cup fresh basil leaves, sliced thin

Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the Tortellini: Cook the tortellini according to package instructions until al dente, then drain and rinse under cold water to cool.
  2. Prepare the Salad: In a large bowl, combine the cooked tortellini, halved cherry tomatoes, mozzarella balls, and sliced basil.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper.
  4. Toss and Chill: Pour the dressing over the salad and toss gently to coat. Chill for at least 30 minutes before serving to allow the flavors to meld.
