Ingredients
For the Soup:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 tablespoons tomato paste
- 1 can (28 ounces) crushed tomatoes
- 3 cups vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For Garnish:
- 1/2 cup crumbled feta cheese, plus extra for garnish
- 1/4 cup heavy cream (optional)
- Fresh basil or parsley for garnish
Instructions
- Prepare the Soup: Heat olive oil in a large pot, sauté onion until soft. Add garlic, oregano, and red pepper flakes. Stir in tomato paste, then add crushed tomatoes and broth. Season with salt and pepper. Simmer for 15–20 minutes.
- Blend the Soup: Use an immersion blender to puree the soup until smooth. Stir in feta cheese and cream, blend again until creamy. Adjust seasoning.
- Serve: Garnish with feta and herbs. Enjoy hot!

- For a vegan version, omit feta and cream or use plant-based alternatives.
