Description

This Tomato & Nduja Bruschetta recipe combines crispy toasted baguette slices with the spicy, spreadable nduja sausage and sweet marinated cherry tomatoes, finished with fresh basil for a vibrant Italian appetizer that’s perfect for any gathering.

Ingredients

Bread and Oil

  • 1 baguette, sliced into 1/2-inch pieces
  • 2 tablespoons olive oil
  • 1 garlic clove, halved

Toppings

  • 1/2 cup nduja sausage, softened
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat and Toast: Preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush lightly with olive oil. Toast them in the oven for 8–10 minutes until they become golden and crisp.
  2. Garlic Rub: While the bread is still warm, rub the cut side of the garlic clove over each toasted slice to infuse them with a subtle garlic flavor.
  3. Prepare Tomato Mixture: In a small bowl, combine the halved cherry tomatoes with balsamic vinegar and a pinch of salt and pepper. Mix gently to marinate the tomatoes.
  4. Assemble Bruschetta: Spread about 1 teaspoon of softened nduja sausage onto each toasted bread slice, then top evenly with the marinated cherry tomatoes.
  5. Garnish and Serve: Add fresh basil leaves on top of each bruschetta just before serving. Serve warm or at room temperature for best flavor.

Notes

  • Nduja is a spicy, spreadable pork sausage originating from Calabria, Italy, known for its rich flavor.
  • For a milder version, you can reduce the amount of nduja used or blend it with mascarpone cheese to soften the spice.
  • Using heirloom cherry tomatoes can add more vibrant colors and extra sweetness to the bruschetta.
