Description

Ingredients

Tofu Scramble:

  • 1 block (14 ounces) firm tofu, pressed and crumbled
  • 1 tablespoon olive oil
  • 1/2 small onion, finely chopped
  • 1/2 red bell pepper, diced
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black salt (kala namak) or regular salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons nutritional yeast, optional

For Assembly:

  • 4 English muffins or sandwich buns
  • 4 slices vegan or regular cheese
  • 1 avocado, sliced
  • Fresh spinach or arugula leaves

Instructions

  1. Prepare Tofu Scramble: Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cooking until softened. Stir in crumbled tofu and cook briefly. Season with turmeric, garlic powder, onion powder, paprika, salt, pepper, and nutritional yeast if using. Cook until heated through and slightly golden.
  2. Assemble Sandwiches: Toast English muffins or buns. Layer each sandwich with cheese, a scoop of tofu scramble, avocado slices, and spinach or arugula. Serve warm.

Notes
