Ingredients
Cupcakes:
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
Coffee Soak:
- 1/2 cup strong brewed coffee, cooled
- 1 tablespoon coffee liqueur (optional)
- 1 tablespoon granulated sugar
Mascarpone Frosting:
- 8 oz mascarpone cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
Garnish:
- Unsweetened cocoa powder for dusting
- Optional chocolate shavings
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a 12-cup muffin tin with cupcake liners.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Cream butter and sugar: In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs and vanilla: Add eggs one at a time, beating well after each, then mix in vanilla.
- Alternate wet and dry ingredients: Alternately add the flour mixture and milk, beginning and ending with flour.
- Bake cupcakes: Divide batter among liners and bake for 18–20 minutes until a toothpick comes out clean. Let cool.
- Prepare coffee soak: Mix cooled coffee, coffee liqueur, and sugar. Poke holes in cupcakes and spoon soak over each.
- Make mascarpone frosting: Beat mascarpone, heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Ice cupcakes: Pipe or spread frosting onto cupcakes.
- Garnish: Dust with cocoa powder and top with chocolate shavings if desired. Chill before serving.

- For a stronger coffee flavor, brush additional coffee soak on the cupcakes before frosting.
