Description

These delightful thumbprint cookies are a classic treat perfect for any occasion. With a buttery shortbread base and a sweet fruity jam filling, these cookies are sure to be a hit with everyone. Easy to make and customizable with different jam flavors, they are a beloved favorite for holiday gatherings or everyday snacking.

Ingredients

Cookies:

  • 1 cup unsalted butter (softened)
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Filling:

  • 1/2 cup fruit preserves or jam (such as raspberry, strawberry, or apricot)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add extracts: Mix in the vanilla extract and almond extract if using.
  4. Combine dry ingredients: Add the flour and salt, and mix until a soft dough forms.
  5. Shape the dough: Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  6. Make indentations: Use your thumb or the back of a spoon to press a small indentation in the center of each ball.
  7. Add filling: Fill each indentation with about 1/2 teaspoon of jam.
  8. Bake: Bake for 12–15 minutes, or until the edges are just starting to turn golden.
  9. Cool and serve: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired before serving.

Notes

  • Swap out the jam flavor to match the season or holiday.
  • If the cookie dough cracks slightly when pressing the centers, gently press the edges back together.
  • These cookies freeze well for up to 2 months.
