Description

Thinly Sliced Parmesan Squash is a simple, flavorful side dish featuring tender yellow squash slices baked with garlic, olive oil, and topped with crispy, golden Parmesan cheese. Perfect as a light snack or paired with your favorite main course, this easy recipe delivers a healthy dose of veggies with a deliciously cheesy twist.

Ingredients

Squash and Seasoning

  • 2 medium yellow squash, thinly sliced
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Topping

  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Instructions

  1. Preheat oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy clean-up.
  2. Prepare squash: In a large bowl, toss the thinly sliced yellow squash with olive oil, garlic powder, salt, and black pepper until all slices are evenly coated with the seasonings and oil.
  3. Arrange slices: Spread the seasoned squash slices in a single layer on the prepared baking sheet, overlapping slightly if necessary to fit them all without stacking.
  4. Add Parmesan topping: Sprinkle the grated Parmesan cheese evenly over the arranged squash slices for a golden and crispy finish after baking.
  5. Bake: Bake in the preheated oven for 15–18 minutes or until the squash is tender and the Parmesan cheese is melted, golden, and crisp on top.
  6. Serve: Remove the baking sheet from the oven and allow the squash to cool slightly. Optionally, garnish with chopped fresh parsley before serving for a fresh, herby note.

Notes

  • This dish works equally well with zucchini or a combination of yellow squash and zucchini for variety.
  • Use a mandoline slicer to ensure uniform thin slices that cook evenly and crisp nicely.
  • Serve as a delicious side dish with mains or enjoy as a light, healthy snack anytime.
