Description

This easy and flavorful BBQ chicken recipe features tender chicken breasts marinated in a classic smoky sweet BBQ sauce and grilled alongside colorful peppers and red onions. Perfectly charred and juicy, these skewers make a delicious and crowd-pleasing meal for any summer cookout or family dinner.

Ingredients

Chicken and Vegetables

  • 7 chicken breasts, trimmed and cut into 1-inch pieces
  • 1 yellow bell pepper, cut into squares
  • 1 red bell pepper, cut into squares
  • 1 large red onion, peeled and cut into chunks

Seasonings

  • 1 tbsp salt
  • 1 tbsp Mrs. Dash Seasoning
  • 1 tbsp Grill Mates Smokehouse Maple Seasoning
  • ½ tsp black ground pepper

Sauces

  • 1½ cups sweet BBQ sauce (for marinating)
  • ½ cup BBQ sauce (for brushing during grilling)

Instructions

  1. Prep the Ingredients: Trim any excess fat from the chicken breasts and cut them into 1-inch pieces. Rinse the chicken and drain well.
  2. Prep the Vegetables: Wash and cut the yellow and red bell peppers into squares. Peel and cut the red onion into chunks. Combine all the vegetables with the chicken pieces in a large bowl.
  3. Season and Marinate: In a separate bowl or large plate, mix together the salt, Mrs. Dash seasoning, Grill Mates Smokehouse Maple seasoning, and black pepper. Sprinkle this seasoning mix evenly over the chicken and vegetables. Add 1½ cups of sweet BBQ sauce and toss everything well to coat. Cover the bowl and refrigerate for at least 6 hours to allow flavors to meld.
  4. Skewer the Ingredients: Thread the marinated chicken pieces and vegetables alternately onto metal skewers or pre-soaked wooden skewers, ensuring even distribution.
  5. Grill the Skewers: Preheat your grill to medium-high heat, then reduce to low. Place the skewers on the grill and cook for 15 minutes. Flip the skewers to cook evenly on the other side.
  6. Brush with Sauce and Continue Grilling: Brush the skewers with the remaining ½ cup of BBQ sauce and grill for another 15 minutes. Flip again, brush the other side with BBQ sauce, and grill an additional 10 to 15 minutes until the chicken is fully cooked through and slightly charred.
  7. Serve: Remove the skewers from the grill and serve hot with your favorite sides for a delicious meal.

Notes

  • For best results, marinate the chicken for a full 6 hours or overnight to enhance flavor and tenderness.
  • If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent burning.
  • Ensure the chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
  • Feel free to customize the vegetables with your favorites like zucchini or mushrooms.
  • This recipe yields approximately 10 servings, perfect for a small gathering or meal prep.
