A hearty and flavorful chili recipe from The Pioneer Woman that is perfect for a cozy meal. This Tex-Mex inspired dish features ground beef, beans, and a blend of spices for a satisfying bowl of comfort.
Ingredients
Ground Beef Mixture:
- 2 lb ground beef
 - 2 cloves garlic, minced
 
Chili Seasonings:
- 1 (8 oz) can tomato sauce
 - 2 tbsp chili powder
 - 1 tsp ground cumin
 - 1 tsp ground oregano
 - 1 tsp salt, plus more to taste
 - ¼ tsp cayenne pepper (optional)
 - ¼ cup masa harina
 - ½ cup water
 
Beans:
- 1 (15 oz) can kidney beans, drained and rinsed
 - 1 (15 oz) can pinto beans, drained and rinsed
 
Instructions
- Brown Ground Beef: In a large pot over medium heat, brown the ground beef with minced garlic, breaking up the meat as it cooks. Drain excess fat.
 - Add Seasonings: Stir in tomato sauce, chili powder, cumin, oregano, salt, and cayenne pepper. Reduce heat, cover, and simmer for 1 hour, stirring occasionally.
 - Thicken Chili: Whisk masa harina with water to form a slurry. Stir into the chili and simmer for 10–15 minutes.
 - Finish and Serve: Add beans, simmer for 10 more minutes. Adjust seasoning. Serve hot with optional toppings.
 
Notes
- This chili freezes well and tastes better the next day.
 - You can substitute cornmeal for masa harina if needed.
