Description

A hearty and flavorful chili recipe from The Pioneer Woman that is perfect for a cozy meal. This Tex-Mex inspired dish features ground beef, beans, and a blend of spices for a satisfying bowl of comfort.


Ingredients

Ground Beef Mixture:

  • 2 lb ground beef
  • 2 cloves garlic, minced

Chili Seasonings:

  • 1 (8 oz) can tomato sauce
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp ground oregano
  • 1 tsp salt, plus more to taste
  • ¼ tsp cayenne pepper (optional)
  • ¼ cup masa harina
  • ½ cup water

Beans:

  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed

Instructions

  1. Brown Ground Beef: In a large pot over medium heat, brown the ground beef with minced garlic, breaking up the meat as it cooks. Drain excess fat.
  2. Add Seasonings: Stir in tomato sauce, chili powder, cumin, oregano, salt, and cayenne pepper. Reduce heat, cover, and simmer for 1 hour, stirring occasionally.
  3. Thicken Chili: Whisk masa harina with water to form a slurry. Stir into the chili and simmer for 10–15 minutes.
  4. Finish and Serve: Add beans, simmer for 10 more minutes. Adjust seasoning. Serve hot with optional toppings.

Notes

  • This chili freezes well and tastes better the next day.
  • You can substitute cornmeal for masa harina if needed.
