Description

The King’s Banana Nut Crunch is a delightful twist on classic banana bread, featuring a crunchy topping of nuts and cereal. This moist and flavorful loaf is perfect for breakfast or as a snack with a cup of coffee.


Ingredients

Bread:

  • 3 ripe bananas (mashed)
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Topping:

  • 1/2 cup chopped toasted pecans or walnuts
  • 1/2 cup crushed cornflakes or bran flakes
  • 1/4 cup peanut butter chips (optional)
  • Extra crushed cereal and nuts for topping


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a loaf pan or muffin tin.
  2. Mix wet ingredients: Cream butter and sugars, add eggs, vanilla, and mashed bananas.
  3. Combine dry ingredients: Whisk flour, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
  4. Combine wet and dry: Mix dry ingredients into wet mixture and fold in nuts, cereal, and peanut butter chips.
  5. Bake: Pour batter into pan, top with extra cereal and nuts, bake for 55–65 minutes for a loaf or 18–22 minutes for muffins.
  6. Cool and serve: Let cool before slicing or serving.
