Ingredients
Bread:
- 3 ripe bananas (mashed)
- 1/2 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Topping:
- 1/2 cup chopped toasted pecans or walnuts
- 1/2 cup crushed cornflakes or bran flakes
- 1/4 cup peanut butter chips (optional)
- Extra crushed cereal and nuts for topping
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a loaf pan or muffin tin.
- Mix wet ingredients: Cream butter and sugars, add eggs, vanilla, and mashed bananas.
- Combine dry ingredients: Whisk flour, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
- Combine wet and dry: Mix dry ingredients into wet mixture and fold in nuts, cereal, and peanut butter chips.
- Bake: Pour batter into pan, top with extra cereal and nuts, bake for 55–65 minutes for a loaf or 18–22 minutes for muffins.
- Cool and serve: Let cool before slicing or serving.
