- 1 teaspoon onion powder

- 1 tablespoon lime juice
- 2 tablespoons fresh cilantro, chopped (optional)
Instructions
- Melt Butter: Place a medium saucepan over medium heat and melt the butter until it becomes just foamy, preparing the base for your roux.
- Make Roux: Whisk in the flour and cook for 1–2 minutes until the mixture turns golden, which will help thicken the queso.
- Add Milk: Slowly pour in the whole milk while whisking constantly to prevent lumps, then let it warm gently, stirring frequently until it thickens slightly, about 5 minutes.
- Melt Cheeses: Lower heat to low and add the sharp cheddar and Monterey Jack cheeses a handful at a time, stirring continuously until the mixture is fully melted and creamy.
- Incorporate Seasonings: Stir in the diced tomatoes with green chiles, finely chopped jalapeño, garlic powder, onion powder, salt, and cumin. Simmer the mixture for 5 minutes, stirring occasionally to combine flavors.
- Finish and Adjust: Remove from heat and stir in the lime juice and chopped fresh cilantro if using. Taste the queso and adjust the seasonings as needed.
