Delicious and easy-to-make lasagna roll ups filled with a creamy ricotta and meat sauce mixture, baked to bubbly perfection. These individual rolls are perfect for family dinners and can be customized for vegetarians.

Pasta
- 12 lasagna noodles
- 1 tablespoon olive oil
Meat Sauce
- 1 pound ground beef or Italian sausage
- 2 cups marinara sauce
Cheese Filling
- 15 ounces ricotta cheese
- 1 1/2 cups shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Garnish
- Chopped fresh parsley
Instructions
- Preheat Oven and Cook Noodles: Preheat the oven to 375°F. Cook the lasagna noodles according to package directions until al dente. Drain and lay flat on a parchment-lined baking sheet to prevent sticking.
- Prepare Meat Sauce: In a large skillet, heat olive oil over medium heat. Add ground beef or sausage and cook until browned, breaking it up with a spoon. Drain excess fat, then stir in 1 cup of marinara sauce and simmer for 5 minutes to develop flavors.
- Make Cheese Mixture: In a mixing bowl, combine ricotta cheese, 1 cup shredded mozzarella, Parmesan cheese, egg, minced garlic, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Mix well until smooth.
- Assemble Roll Ups: Spread about 2 tablespoons of the cheese mixture evenly over each noodle, then spoon a portion of the meat sauce on top. Roll up each noodle tightly and place seam-side down in a greased 9×13-inch baking dish.
- Add Sauce and Cheese: Pour the remaining 1 cup of marinara sauce over the assembled roll ups. Sprinkle the remaining 1/2 cup of mozzarella cheese evenly on top.
- Bake: Cover the dish with foil and bake for 25 minutes. Remove foil and continue baking an additional 10 minutes until the cheese is bubbly and golden brown.
- Garnish and Serve: Remove from oven and garnish with freshly chopped parsley before serving. Enjoy warm.
Notes
- You can use store-bought or homemade marinara sauce for convenience or added flavor.
- For a vegetarian version, omit the meat and add sautéed spinach or mushrooms to the cheese filling.
- These roll ups freeze well before baking; simply cover tightly and freeze for up to 2 months.
