Description

Delicious and easy-to-make lasagna roll ups filled with a creamy ricotta and meat sauce mixture, baked to bubbly perfection. These individual rolls are perfect for family dinners and can be customized for vegetarians.

Ingredients

Pasta

  • 12 lasagna noodles
  • 1 tablespoon olive oil

Meat Sauce

  • 1 pound ground beef or Italian sausage
  • 2 cups marinara sauce

Cheese Filling

  • 15 ounces ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Garnish

  • Chopped fresh parsley

Instructions

  1. Preheat Oven and Cook Noodles: Preheat the oven to 375°F. Cook the lasagna noodles according to package directions until al dente. Drain and lay flat on a parchment-lined baking sheet to prevent sticking.
  2. Prepare Meat Sauce: In a large skillet, heat olive oil over medium heat. Add ground beef or sausage and cook until browned, breaking it up with a spoon. Drain excess fat, then stir in 1 cup of marinara sauce and simmer for 5 minutes to develop flavors.
  3. Make Cheese Mixture: In a mixing bowl, combine ricotta cheese, 1 cup shredded mozzarella, Parmesan cheese, egg, minced garlic, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Mix well until smooth.
  4. Assemble Roll Ups: Spread about 2 tablespoons of the cheese mixture evenly over each noodle, then spoon a portion of the meat sauce on top. Roll up each noodle tightly and place seam-side down in a greased 9×13-inch baking dish.
  5. Add Sauce and Cheese: Pour the remaining 1 cup of marinara sauce over the assembled roll ups. Sprinkle the remaining 1/2 cup of mozzarella cheese evenly on top.
  6. Bake: Cover the dish with foil and bake for 25 minutes. Remove foil and continue baking an additional 10 minutes until the cheese is bubbly and golden brown.
  7. Garnish and Serve: Remove from oven and garnish with freshly chopped parsley before serving. Enjoy warm.

Notes

  • You can use store-bought or homemade marinara sauce for convenience or added flavor.
  • For a vegetarian version, omit the meat and add sautéed spinach or mushrooms to the cheese filling.
  • These roll ups freeze well before baking; simply cover tightly and freeze for up to 2 months.
