Ingredients
For the Tomato Soup:
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (28 ounces) whole peeled tomatoes
- 2 cups vegetable broth
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1/4 cup heavy cream (optional)

- Fresh basil leaves
Instructions
- Heat Olive Oil: In a large pot, heat olive oil over medium heat.
- Cook Onion and Garlic: Add chopped onion, cook until softened. Stir in garlic.
- Add Tomato Paste: Cook for 1 minute.
- Add Tomatoes and Broth: Pour in tomatoes, vegetable broth, sugar, salt, pepper, and thyme. Simmer for 20–25 minutes.
- Puree the Soup: Use an immersion blender or transfer to a blender to puree until smooth. Stir in heavy cream if desired.
