Description

Indulge in the deliciously chewy and flavorful cowboy cookies that are loaded with oats, chocolate chips, coconut, and pecans. These cookies are perfect for satisfying your sweet tooth cravings!

Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract

Mix-Ins:

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups semisweet chocolate chips
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugars: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients.
  5. Add mix-ins: Stir in the oats, chocolate chips, coconut, and pecans until evenly combined.
  6. Bake: Drop dough by heaping tablespoons onto the prepared baking sheets. Bake for 10–12 minutes or until golden brown. Cool on baking sheet before transferring to a wire rack.

Notes

  • For a chewier cookie, slightly underbake and allow to finish setting on the baking sheet.
  • You can substitute walnuts for pecans or use dark chocolate chips for a richer flavor.
