Ingredients
Dry Ingredients:

- 1 cup packed light brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
Mix-Ins:
- 2 cups old-fashioned rolled oats
- 1 1/2 cups semisweet chocolate chips
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sugars: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients.
- Add mix-ins: Stir in the oats, chocolate chips, coconut, and pecans until evenly combined.
- Bake: Drop dough by heaping tablespoons onto the prepared baking sheets. Bake for 10–12 minutes or until golden brown. Cool on baking sheet before transferring to a wire rack.
Notes
- For a chewier cookie, slightly underbake and allow to finish setting on the baking sheet.
- You can substitute walnuts for pecans or use dark chocolate chips for a richer flavor.
