Description

This creamy and flavorful Chicken Spaghetti casserole combines tender angel hair pasta with cooked chicken, cream of chicken soup, salsa, sour cream, and a delicious Mexican cheese blend. Topped with melted cheese and a sprinkle of parsley, it’s an easy, comforting baked dish perfect for family dinners.

Ingredients

Main Ingredients

  • 8 ounces angel hair pasta (half of a 16 ounce box)
  • 2 cups chopped, cooked chicken
  • 2 (10.5 ounce) cans cream of chicken soup
  • 1 cup salsa
  • 1/2 cup sour cream
  • 2 cups Mexican cheese blend, divided use
  • 1 tablespoon taco seasoning
  • Dried parsley (for topping, optional)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking and make cleanup easier.
  2. Cook pasta: Bring a large pot of water to a boil and cook 8 ounces of angel hair pasta according to the package directions. Drain the pasta thoroughly once cooked.
  3. Combine ingredients: Place the drained pasta back into the pot. Add 2 cups chopped, cooked chicken, 2 cans of cream of chicken soup, 1 cup salsa, 1/2 cup sour cream, 1 cup of the Mexican cheese blend, and 1 tablespoon taco seasoning. Stir everything well to ensure the mixture is evenly combined and coated.
  4. Assemble casserole: Pour the combined mixture into the prepared baking dish. Sprinkle the remaining 1 cup of the Mexican cheese blend evenly over the top. Optionally, add a sprinkling of dried parsley for color and garnish.
  5. Bake: Cover the dish with nonstick aluminum foil and bake in the preheated oven for about 25 minutes, or until the casserole is hot, bubbly, and the cheese on top is melted and lightly golden.

Notes

  • You can substitute cream of chicken soup with a homemade creamy base for a fresher taste.
  • If you like a bit of heat, add some chopped jalapeños or use spicy salsa.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • For a lower calorie version, use reduced-fat cheese and sour cream.
  • To make prep easier, use leftover cooked chicken or rotisserie chicken.
