- Heat aromatics: Heat sesame oil in a large pot over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant to release their flavors.
- Add curry paste: Stir in the red curry paste and cook for an additional 30 seconds, allowing the spices to bloom and deepen in aroma.
- Prepare broth: Pour in the chicken or vegetable broth along with soy sauce, fish sauce, and brown sugar. Stir to combine and bring the mixture to a gentle boil.
