Description

This Tex-Mex Grilled Cheese recipe combines the comforting goodness of a grilled cheese sandwich with flavorful Tex-Mex ingredients like black beans, corn, and spices, all melted between layers of cheddar and pepper jack cheese. A zesty twist on a classic favorite!


Ingredients

Bread and Butter:

  • 4 slices sourdough or thick sandwich bread
  • 1 tbsp butter (softened)

Cheese and Filling:

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • 1/4 cup black beans (rinsed and drained)
  • 1/4 cup corn kernels (fresh, canned, or frozen and thawed)
  • 1/4 cup diced tomatoes
  • 2 tbsp chopped green onion
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • pinch of salt


Instructions

  1. Mix Tex-Mex Filling: In a small bowl, combine black beans, corn, tomatoes, green onion, cumin, chili powder, and salt.
  2. Prepare Bread: Butter one side of each bread slice.
  3. Assemble Sandwich: Place slices butter-side down, layer cheeses, Tex-Mex mixture, remaining cheese, and top with second bread slice.
  4. Cook: Grill over medium heat for 3-4 minutes per side until golden brown and cheese melts.
  5. Serve: Slice and enjoy warm.
