Ingredients
For the Foil Packets:
- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 cup teriyaki sauce
- 2 cups fresh pineapple chunks
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 small red onion (sliced)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 teaspoons sesame seeds (optional)
- 2 green onions (sliced for garnish)
- Cooked white rice or brown rice for serving
Instructions
- Preheat Grill or Oven: Preheat to 400°F.
- Prepare Foil Packets: Lay out four large sheets of heavy-duty aluminum foil. Drizzle with olive oil. Place one chicken breast on each sheet, season with salt and pepper. Divide pineapple, bell peppers, and onion evenly among packets.
- Add Teriyaki Sauce: Pour 1/4 cup teriyaki sauce over each chicken and vegetables.
- Seal Packets: Fold foil tightly to seal packets. Grill or bake for 20–25 minutes until chicken reaches 165°F.
- Serve: Garnish with sesame seeds and green onions. Serve over rice.
