Description

These Teriyaki Chicken and Pineapple Foil Packets are a delicious and easy-to-make meal perfect for summer grilling. Juicy chicken breasts are cooked with sweet pineapple, bell peppers, and onions in a flavorful teriyaki sauce, then served over rice for a satisfying dish.


Ingredients

For the Foil Packets:

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup teriyaki sauce
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 small red onion (sliced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 teaspoons sesame seeds (optional)
  • 2 green onions (sliced for garnish)
  • Cooked white rice or brown rice for serving


Instructions

  1. Preheat Grill or Oven: Preheat to 400°F.
  2. Prepare Foil Packets: Lay out four large sheets of heavy-duty aluminum foil. Drizzle with olive oil. Place one chicken breast on each sheet, season with salt and pepper. Divide pineapple, bell peppers, and onion evenly among packets.
  3. Add Teriyaki Sauce: Pour 1/4 cup teriyaki sauce over each chicken and vegetables.
  4. Seal Packets: Fold foil tightly to seal packets. Grill or bake for 20–25 minutes until chicken reaches 165°F.
  5. Serve: Garnish with sesame seeds and green onions. Serve over rice.
