Ingredients
Chicken:
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
Orzo:
- 2 tablespoons butter
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 cup uncooked orzo pasta
- 2 ½ cups low-sodium chicken broth
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Cook the Chicken: Heat olive oil in a large skillet, add seasoned chicken, cook until browned, then set aside.
- Prepare Orzo: Melt butter, sauté onion and garlic, add orzo to toast, pour in broth and seasoning, simmer until tender.
- Finish Dish: Stir in cream, Parmesan, and chicken. Cook until creamy. Garnish with parsley and serve.
