Description

Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tbsp honey (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, honey, salt, and pepper.
  3. Add the carrot sticks to the bowl and toss them until they are evenly coated with the lemon garlic mixture.
  4. Arrange the coated carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 25-30 minutes, or until the carrots are tender and lightly browned, stirring halfway through for even roasting.
  6. Remove from the oven and sprinkle with fresh parsley before serving.
