- 1 lb carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tbsp honey (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, honey, salt, and pepper.
- Add the carrot sticks to the bowl and toss them until they are evenly coated with the lemon garlic mixture.
- Arrange the coated carrots in a single layer on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes, or until the carrots are tender and lightly browned, stirring halfway through for even roasting.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- For a spicier kick, you can add a pinch of red pepper flakes to the garlic mixture.
- If you prefer softer carrots, roast them for a longer time at a lower temperature (375°F or 190°C).
