Description

These Tahini Butter Chocolate Chip Cookie Bars combine the nutty richness of tahini with the classic comfort of chocolate chip cookies in a convenient bar form. Soft, chewy, and slightly gooey when freshly baked, they offer a unique twist on a beloved treat that’s perfect for sharing or snacking.


Ingredients

Wet Ingredients

  • 2 sticks (1 cup) salted butter, at room temperature
  • 1/3 cup brown sugar
  • 1/2 cup honey
  • 2/3 cup tahini
  • 2 eggs, at room temperature
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 1/2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt

Add-ins

  • 2 cups semi-sweet or dark chocolate chips, or chunks


Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper to prevent sticking and for easy removal of the cookie bars.
  2. Mix Wet Ingredients: In a large mixing bowl, beat together the softened butter, brown sugar, honey, and tahini until the mixture is smooth and well combined. Then, add in eggs one at a time, beating thoroughly after each addition. Stir in the vanilla extract to add aroma and flavor.
  3. Add Dry Ingredients and Chocolate: Gradually add the flour, baking soda, and salt to the wet mixture, stirring gently to combine. Be careful not to overmix. Finally, fold in the chocolate chips or chunks evenly throughout the dough.
  4. Spread and Bake: Spread the cookie dough evenly into the prepared baking dish, smoothing the top with a spatula. Bake in the preheated oven for 16-20 minutes for a soft, doughy texture. Note that baking longer will set the cookie bars more firmly.
  5. Cool and Serve: Remove the cookie bars from the oven and let them cool for about 30 minutes in the pan to firm up. Once cooled, cut into 24 bars. Enjoy immediately or store in an airtight container for up to 4 days.
